NEW JOB


Oh i am so excited, for the past few weeks i have been kinda down because i was let go from my old job that i hated!


but now i am super excited a place that i use to work for called me last week and asked if I would do a tasting for them just to help them out i said sure no problemo i wasnt doing anything else! when i get there the owner of the theater and the new opperations manager bombard me saying that I am there first and only choice for pastry chef and they really want me to work for them:)


so in other words......... YAAAAAAAAAAAAAAAAAAY


this is going to be amazing...stressfull and not much sleep


but amazing!!!


the place where i am working does 550-600 events in a year and most being over 100 people so its going to be a hell of a ride! but i am ready i miss working so much!

I missed FOOD so much!

The Little Red Roaster


If any of you readers out there ever happen to be in London Ontario, Cananda make sure to check out one of the Little Red Roaster Shops! they have amazing coffee! my girlfriend is a self professed coffee conoisseur and is absolutly in love with the Little Red Roaster coffee, so do your self a favor and sip away on these tasty brewed beans :)

Sunday Dinner













tonights mission
I had the family over for dinner tonight and we had a delicious warm meal to combat the crappy, cold and rainy weather Toronto had today! I did the Roast Chicken and the Braised Savoy Cabbage from The Naked Chef, and i also did my famous Brussle Sprouts,I cut them in half, toss them in olive oil, salt and pepperand then I roast them in the oven for about 15-20 min on about 400 and then i toss them in honey, they are so sweet and nutty and just absolutly amazing!!!
The dinner turned out to be a great night and for dessert we had Creme Caramel!
Perfect night with a never better meal!

I know this is not food related but I think we have one of the cutest cats ever!! his names scrappy but i call him spankey....he is the sweetest cat in the world and this picture needs to be shown to everyone!
he looks so happy and at peace and relaxed!!! it just warms my tummy :)

Turkey Pot Pie


delish dinner :) tonight i made some turkey pot pie...turkey, carrots, corn, peas, celery and onions all cooked with chicken stock then added a grated in potato to thicken it then put over it a home made pastry crust and baked it for about an hour at 350...then at the end i grated on some parm and served it up! photo cred to my sister in law...shes alot better at pics then me!!!

Italian Braised Short Ribs :)



I braised some beef short ribs last night and me and my mom had some pulled beef sandwiches for lunch :) I had to improvise because i didnt have any tomatoes or tomato sauce so i used some of the Minestrone soup that i made the other day as well as red wine, beef stock and caramelised onions....cooked them for two and a half hours in a dutch oven and let them cool in the sauce untill they were cold to the touch and the sauce has soaked up into the mead, i then strained the sauce and reduced it and voila yummo beef :)

is there a better smell??


I dont think that i love any smell as much as i love onions cooking...its such a homey simple smell...mmmmmmm wonderfull! what are your favorite cooking smells?
So its 2:30 am and i have to work at 6:30am....thats right in 4 hours and i am still not sleeping! I love working at the market so much but i hate how early i have to be there....I work as a butcher for an natural/ethical butcher shop and it is wonderful...even though i am moving 2 hours away i still plan on comming back and working at this market when ever i can come home to Toronto! if any of you make any travels to Toronto be sure to check out the St Lawrence Market on Saturdays and Kensington Market on Sundays....both AMAZING markets in toronto full of anything your heart desires! Oh i am going to miss toronto when i move! But its time for a change....and also time to pack...i am moving in about 2 weeks and havent packed a single thing.....oh boy.....
we were debating at work the other day when you should stop saying Happy New Year to people personally i think that 7 days after the new year is pleanty and it should stop! what do you think?? what is your happy new years grace period??

LOVE PEOPLE!

so I have put together all the facts and have come to the conclusion that i have been "let go" from my job because of my sexual orientation...I just spoke to my old chef ( who was fired a week before myself) and he said that the restaurant owner has had it in for me since the moment he found out I was queer and couldnt lay me off because my chef would not let him.....i wish that i had more physical proof...because then i could do somthing about it!

I am sorry about the random non food related rant...but i think this does affect everyone...not that everyone is queer but everyone has the right to not be discriminated against! And i think this is somthing that affects the Restaurant industry alot! I am in a state of shock right now and i really dont know what to think....i probably shouldnt be because anger is clouding my thoughts and they are not rational....any thoughts....ideas??

I dont get why people cant just support love

again sorry about the non food related rant!

MINESTONE


well the first thing i have decided to make from jamies "the naked chef" book is very simple, yummy and Italian!!! i did Jamies version of minestrone, full of veggie yumminess :)!!! It is very simple to make, doesnt take alot of kitchen talent because its a homie dish, rough cut veggies its all about the flavor and its dishes like this that make me love the saying "simple is best"!
I had a major melt down today because i was let go from one of my jobs...aparently he cant afford to have me on staff anymore because I am to expensive...meaning he ( the owner) doesnt want to cut my pay and he feels i am worth more then he can afford to give me...witch could be complete bull shit and he just doesnt want me there anymore because of personal issues he has with me...I belive it is the latter...but he cant fire me for those reasons because that is called descrimination!
So after having a rough morning i came home and decided to start my challenge! now i will do it and i will finish it by the end of the year but until i find another job i wont be able to afford to do it everyday like i had hoped!
